Chocolate Pistachio Tart

Ingredients

  • For the base:
  • 150g digestive biscuits or graham crackers
  • 75g unsalted butter, melted
  • For the filling:
  • 200g dark chocolate (around 60–70% cocoa), chopped
  • 200ml heavy cream
  • 2 tablespoons honey or golden syrup
  • 1 tablespoon butter
  • 1/2 teaspoon vanilla extract
  • A pinch of salt
  • For the pistachio layer:
  • 100g shelled pistachios (unsalted)
  • 2 tablespoons icing sugar
  • 2 tablespoons neutral oil or cream
  • 1/4 teaspoon almond extract (optional)
  • Topping:
  • Chopped roasted pistachios
  • Dark chocolate shavings or curls

Instructions

    Crush the biscuits into fine crumbs and mix with melted butter. Press into a tart tin and chill in fridge.

    Make pistachio paste: blitz pistachios, sugar, oil and almond extract until smooth. Spread over the chilled base.

    Heat cream with honey just until bubbling. Remove from heat and stir in chocolate, butter, salt and vanilla. Stir until smooth.

    Pour over the pistachio layer. Chill for at least 2 hours or until set.
