Plum and Blackberry Galette Recipe
Ingredients
- FOR THE PASTRY:
- 190 g plain flour
- 25 g caster sugar
- ¼ tsp fine salt
- 115 g unsalted butter, cold and cut into small cubes
- 3–4 tbsp ice-cold water
- FOR THE FILLING:
- 400 g plums, pitted and sliced
- 120 g blackberries
- 60 g caster sugar
- 15 g cornflour
- 1 tsp lemon juice
- ½ tsp vanilla extract
- TO FINISH:
- 1 egg, beaten
- 1 tbsp brown sugar

Place the flour, caster sugar and salt in a large bowl and mix together. Add the cold butter and rub it into the flour with your fingertips until the mixture resembles coarse breadcrumbs, leaving a few small pieces of butter visible.

Add the cold water, 1 tablespoon at a time, mixing gently until the dough just comes together. Do not knead it.

Shape the dough into a disc, wrap and refrigerate for at least 30 minutes.

Place the sliced plums and blackberries in a bowl. Add the sugar, cornflour, lemon juice and vanilla and toss gently until the fruit is evenly coated.

Preheat the oven to 200°C conventional / 180°C fan. Line a baking tray with baking paper.

Roll the chilled pastry on a lightly floured surface into a rough circle approximately 30 cm in diameter. Transfer it to the prepared baking tray.

Arrange the fruit in the centre of the pastry, leaving a border of approximately 5 cm around the edge. Avoid pouring any large amount of liquid remaining in the bowl over the fruit.

Fold the pastry border over the fruit, pleating it naturally as you work around the galette. Leave the centre uncovered.

Brush the pastry with beaten egg and sprinkle with brown sugar.

Bake for 35–45 minutes, until the pastry is deep golden and the fruit juices are bubbling and have thickened.

Leave the galette on the baking tray for about 15 minutes before transferring it to a wire rack. Serve warm or at room temperature.
