Ingredients

  • FOR THE PEACH FILLING
  • 5 ripe peaches (about 700g), cored, peeled and sliced

  • 150g granulated sugar

  • ¼ tsp salt

  • ½ tsp ground cinnamon (optional)
  • FOR THE BATTER
  • 120g plain flour
  • 
160g granulated sugar

  • 1½ tsp baking powder
  • ¼ tsp salt

  • 200ml whole milk
  • 
100g butter
  • ½ tsp ground cinnamon (optional)

Instructions

    Prepare the workstation.
Gather all the tools and ingredients.

    Preheat the oven to 180°C.

    Place peaches, sugar, salt and cinnamon in a saucepan and cook on medium heat. Cook until sugar is dissolved and peaches have released some juices. Remove from heat and set aside. Skip this step if you're using canned peaches.

    Place butter in a baking dish (20–23 cm) and melt it in the oven. Remove once fully melted and leave the butter inside.

    For the batter, mix together in a large bowl, the flour, sugar, baking powder and salt. Add the milk and mix until a smooth batter forms.

    Pour the batter evenly over the melted butter in the baking dish. Do not stir.

    Spoon the peaches and their juices over the batter. Do not mix. Sprinkle some ground cinnamon all over, if desired.

    Bake for 40–45 minutes until the top is golden and the fruit is bubbling at the edges.
